Ahh winter, for most of the country you’re cold, sometimes snowy and awfully dark. We go to work when the sun is just barely starting to rise for the day and go home when it’s just about set. You make us sleepy at 7pm and unmotivated to leave our beds on cold mornings.

This Pesto Broccoli Sweet Potato Rice Casserole by Inspiralized looks phenominal! What a good idea to use sweet potato rice in a casserole. I’m going to have to try this ASAP!
