Amaranth Granola Clusters

These amaranth granola clusters are a crispy and chewy, naturally powerful snack, that will keep you energized throughout your busy day!




  1. Pre-heat the oven to 250 degrees
  2. Soak dates in water for about 20 minutes.
  3. Add dates and water to a food processor and blend until a “date paste” is formed.
  4. In a medium bowl, mix together the oats, walnuts, pumpkin seeds, chia seeds and cinnamon.
  5. Stir in the cooked amaranth.
  6. (It will become sticky at this point).
  7. Add the date paste and peanut butter together in a large glass measuring cup.
  8. Heat in microwave for 40 seconds to melt the peanut butter.
  9. Pour the date & peanut butter mixture over the amaranth granola mixture in the medium bowl.
  10. Mix together.
  11. Line a baking sheet with tin-foil (you will probably need two baking sheets).
  12. Spray with organic non-stick cooking spray.
  13. Begin dropping the sticky granola mixture in bite-size clumps onto the baking sheet.
  14. Bake for about 1 hour 10 minutes stirring and flipping the granola clusters every 20 minutes. Low and slow!
  15. Or bake until granola clusters are crispy on the outside and chewy in the middle.
