This avocado chicken quesadilla is an easy weeknight meal that literally melts in your mouth. Warm avocado mixed with a savory goat cheese & crispy corn tortilla makes these not only pleasing for adults but the kiddos too!
A spin on a traditional quesadilla by adding some avocado to let the slices melt and mix in with the cheese and chicken. You can get creative by subbing out the chicken for turkey, tofu, tempeh, etc.

Ingredients
- 8 corn tortilla shells
- 2 avocado’s
- 8 organic chicken tenders
- 4 tbsp. goat cheese
- 1/4 cup shaved cheddar cheese
- Earth Balance Butter
- Sea Salt
- Black Pepper
Instructions
- Put 1 tbsp. of the earth balance butter in a cast iron skillet and place on the stove-top at medium-high heat.
- Once hot, add the chicken tenders, season with black pepper and sea salt.
- Cook until browned.
- Remove the chicken tenders from the cast iron skillet.
- Add 1 tbsp. earth balance butter to the skillet and add 1 corn tortilla.
- On top of the tortilla, layer with 1 tbsp. goat cheese, 1/2 sliced avocado, 1/16 shredded cheddar cheese and 2 shredded chicken tenders.
- Place another tortilla on top.
- Cook each side until the tortilla is browned and the cheese is melted.
- Repeat to make 4 quesadillas.
