This weekend was BEAUTIFUL. Sunshine + warm weather, it felt just like summer!
It was the perfect weekend for some pool time, outdoor walks, making good warm-weather recipe and a little girl time with one of my friends!

Here we have spiralized beet noodles on top of spiralized broccoli stems. Yes, you can eat the stems. The stems are packed with nutrition but often so hard and awkward to cook with. Until now!
For an easy vegan/vegetarian dinner, grab a few beets and broccoli and take them to your spiralizer! They make a unique and delicious salad. Plus they look fun and colorful so what’s not to love!

- Grilled Tempeh Slices
- Hummus Dressing (Hummus watered down to make a salad dressing)
