Honestly is there anything better in the fall than squash and cheese?.. let me answer that for you.. nopeeee. At least in my opinion.

Today, we’re talking about a favorite pasta bake of mine. I posted this recipe first a few years ago so an update is long overdue. Plus it’s SUCH a super easy recipe. Like 3 ingredients easy. (Well besides the seasoning.)

I consider butternut squash a vegetable but did you know it’s technically a fruit because of its seeds?! Yep, it is! Butternut squash provides an array of health benefits such as:

  • It delivers a large dose of dietary fiber making it a great heart-healthy choice
  • Provides a significant amount of potassium, which is great for bone health
  • It’s loaded with Vitamin B6 which is essential for proper functioning of both the nervous and immune systems

This recipe uses my Easy Butternut Squash Pasta Sauce as a base. The great thing about that sauce is you can make it ahead of time on the weekend so this meal comes together in no time!

Butternut Squash Mac n’ Cheese Bake

Butternut squash mac n’ cheese bake is an easy, hearty fall dish that’s sure to please any mac n’ cheese lover. Plus the extra dose of health benefits from the sneaky butternut squash is a plus!

Ingredients

  • 2 cups dry organic whole wheat pasta
  • 2 cups of my Butternut Squash Pasta Sauce Recipe
  • 1 cup shredded organic cheddar cheese
  • Sea Salt
  • Black Pepper

Instructions

  1. Pre-heat the oven to 350 degrees.
  2. Bring a medium stock pot full of water to a boil and add the pasta.
  3. Only cook for a few minutes to partially cook the pasta.
  4. Strain the water off the pasta.
  5. Add the pasta, cheese and butternut squash sauce into a bowl and mix together.
  6. Spray two ramekin individual size baking dishes with organic non-stick cooking spray.
  7. Scoop the mixture into the dishes.
  8. Top with an extra sprinkle of cheese and a dash of sea salt and black pepper.
  9. Cook for 25 minutes or until cheese topping is slightly brown.
  10. Let cool for a minute before serving.

I just love that the outside noodles on the dish are so crispy but once you scoop your first bite out of the middle the cheese, squash and noodles are so creamy!
