The weather is getting chilly. Though not as bad as my Michigander family/friends who are experiencing snow already… sorry! But it is getting into the 30’s and 40’s here at night. Which I love. Crispy fall days adds a relaxing vibe to everyone I believe. No more rush, rush. It helps slow us down to enjoy the moments, the friendships and the tasty food of the season.

I decided to whip out my cast iron skillet for one of the few times I’ve actually used it! This Caramelized Butternut Squash recipe makes enough for two people.

Caramelized Butternut Squash

Caramelized butternut squash is a simple and decadent taste of fall that brightens any dish.

Ingredients

  • 1 Small Butternut Squash
  • 1 1/2 tbsp. Organic Brown Rice Syrup
  • 1 tbsp. Organic Coconut Oil
  • 1 tsp. Cinnamon

Instructions

  1. Peel & skin butternut squash.
  2. Chop into small cubes and place in a medium bowl.
  3. In a small bowl, add 1 tbsp. brown rice syrup and the coconut oil.
  4. Microwave for 25 seconds to heat it up
  5. Stir together.
  6. Pour liquid mixture over butternut squash
  7. Sprinkle cinnamon over the top.
  8. Toss the squash to coat all pieces evenly.
  9. Heat a cast iron skillet and add some earth balance butter to prevent sticking
  10. Add in the squash and cook for about 20-25 minutes stirring & tossing every so often
  11. Squash should be browned and caramelized when done.
  12. Serve warm!
