I’m back from a consulting trip in Grand Rapids! I had a great time and covered A LOT with the client. Another geek-out moment… but it makes me so incredibly happy to be able to finally put my education and knowledge to use while in pursuit of that full-time job!
I hit the road early with my dad so I packed overnight oats in a leftover almond butter jar to go! I was also all dressed and ready to meet with the client! After a busy day of consulting work, I headed to meet my family at my Aunt’s house for dinner. So nice to catch up with family while I was in town!
A busy day ahead but I hit the gym early to fit in my #BestBodyBootcamp work out. I took Thursday off so my workouts were pushed back a day. Good thing I packed my own almond butter to top my oatmeal! Power packed breakfast of oatmeal with walnuts, almond butter & dried cherries and some hard-boiled eggs on the side. I saved the banana for later in the morning.
After another busy day of consulting, I met back up with my dad and we visited a local Italian market to pick up some goodies! I was in HEAVEN. There were aisles of olive oils, vinegar’s, wine, HUGE deli cases of olives, meats, cheese as well as crackers, cookies, etc. I practically had to pick my jaw up from the floor when we walked in there! You can tell I’m not use to such a selection! Haha!
For dinner we headed to Rockwell | Republic in downtown GR after reading some great reviews. We went with two different types of sushi and two small plates, hummus and sticky chicken. Everything was delicious! Of course we saved room to sample a few different brews at two local breweries we haven’t been to yet, Grand Rapids Brewing Company and The Mitten Brewing Company. Grand Rapids actually tied with Asheville, NC to share the title of Beer City USA 2012!
I’ll save my Saturday review for tomorrow’s Marvelous In My Monday. Let’s just say it entailed some MUCH NEEDED shopping!
Looking ahead at this week’s meal plan there are lots of good meals in store! Although I ate fairly healthy during my quick trip, there’s nothing like getting back into the swing of things to make you feel better!
Sunday: Leg of lamb w/ green beans
Monday: Pasta (from the Italian market!) w/ side salad
Tuesday: Indian chickpea curry w/ naan bread & beet salad
Wednesday: Buffalo Burgers over salad
Thursday: Baked salmon w/ brussels sprouts & sweet potato
The grocery shopping will be done tomorrow.
