Real food is just seriously so cool. As if I don’t preach it enough right?! I mean look at it though. You would never find something this unique food in a sealed bag or a McDonald’s drive-through.

I picked up this turban squash on a whim actually awhile ago and just stuck it in my pantry. Good thing squash keeps for a long time huh?! Well finally after a little inspiration from good ole’ Martha I came up with an idea on how to use up the squash.

I’ve mentioned the health benefits of winter squash before and turban squash is no different; high in dietary fiber, folate, vitamin C and beta-carotene which are all essential to cardiovascular health.

This dip is similar to hummus but the organic cream cheese and organic goat cheese adds a warm, smooth consistency. The perfect dip for Thanksgiving, a chilly fall football day or the heart of winter. (AKA all my northern friends that have winter 6 months out of the year).

Cheesy Turban Squash Dip

Cheesy turban squash dip is a cheesy hummus-like dip that’s the perfect holiday appetizer and center decor piece for your dining room table!

Ingredients

  • 3/4 cup cubed turban or butternut squash
  • 1 can organic garbanzo beans
  • 2 tbsp. organic cream cheese
  • 2 tbsp. organic goat cheese
  • 1/4 cup EVOO
  • 1/4 lemon juice
  • Italian Seasoning
  • Black Pepper
  • Sea Salt

Instructions

  1. Cut top off a turban squash and scoop out the seeds.
  2. You may either scrap the sides to get 3/4 cup worth of turban squash or use 3/4 cup cubed butternut squash.
  3. Tip for scrapping the sides of the turban squash: Place the squash in the microwave for 1 minute to warm up. This will help soften the sides.
  4. Roast squash at 375 degrees in the oven until squash is tender.
  5. This will take about 30-35 minutes.
  6. Add squash, garbanzo beans, EVOO, cream cheese, goat cheese, lemon juice and a dash of Italian seasoning, black pepper and sea salt to a blender.
  7. Lightly blend until all ingredients are combined.
  8. Pour mixture into the hollowed out turban squash.
  9. Sprinkle Italian seasoning, black pepper and sea salt on the top to serve.
  10. Serve immediately so it’s warm or put it in the microwave for a few minutes to warm up the dip.

I suggest serving this dip with homemade pita chips drizzled with olive oil and sprinkled with sea salt and black pepper.

Not only is this dip super delicious but serving it in the turban squash makes for a unique table decor piece. Make this up right before your guests arrive and set the accent table with this in the middle! It’s sure to make a statement to all of  your guests!
