Cheesy Turban Squash Dip

Cheesy turban squash dip is a cheesy hummus-like dip that’s the perfect holiday appetizer and center decor piece for your dining room table!

  1. Cut top off a turban squash and scoop out the seeds.
  2. You may either scrap the sides to get 3/4 cup worth of turban squash or use 3/4 cup cubed butternut squash.
  3. Tip for scrapping the sides of the turban squash: Place the squash in the microwave for 1 minute to warm up. This will help soften the sides.
  4. Roast squash at 375 degrees in the oven until squash is tender.
  5. This will take about 30-35 minutes.
  6. Add squash, garbanzo beans, EVOO, cream cheese, goat cheese, lemon juice and a dash of Italian seasoning, black pepper and sea salt to a blender.
  7. Lightly blend until all ingredients are combined.
  8. Pour mixture into the hollowed out turban squash.
  9. Sprinkle Italian seasoning, black pepper and sea salt on the top to serve.
  10. Serve immediately so it’s warm or put it in the microwave for a few minutes to warm up the dip.
