If you asked me to name my top 5 favorite foods granola would definitely be ranked in there. Back in college when all my friends and I would get back from going out I always was the one who reached for granola over any other snack food. Actually it became a huge joke and everyone would start asking me if I was planning to have granola when I got back home. “Yep, sure am”. See, told you, I’m literally such a granola.

But granola can be one of those sneaky health foods. Most people think that just because it says granola that it’s automatically good for you. No. Just no. It’s not. Most store-bought granolas are PACKED with sugar to make it highly addictive.

Thankfully, I grew up raised by two granola’s that practically always had real, homemade granola freshly stocked in the pantry. My parents actually met at work and bonded over the fact that they both liked granola. Yep, I definitely know I’m not adopted. I can’t make this stuff up people! My parents also lived in Boulder, Colorado for many years hiking the mountains and cross-country skiing. My dad was king of making granola and I remember them always talking about his “backpacking granola”. It’s bomb. That’s his secret so I can’t spill the beans on that one. But The Best Darn Granola Recipe we collaborated together on is just about as good!

So I knew embarking on my adventure back to my homeland I needed to make some hearty granola to fuel B and I through the trip. However, most of the time I like my granola chunky and thick.

But this time I wanted something light and not many chunks to it. I wanted something I could add milk to at hotels and have a “hearty cereal” instead of a munchy snack. Thus the idea of incorporating quinoa popped into my head to add an extra crunch.

I love the sweet coconut flavor with the slightly bitter, nuttiness of the granola. It’s a great combination for a summertime granola!

  • 3 cups rolled oats
  • 1 cup rinsed & dried quinoa
  • 3/4 cup walnuts
  • 1/2 cup pumpkin seeds
  • 1 1/4 cup shredded coconut
  • 1 cup chopped dried banana
  • 3 tbsp. coconut oil
  • 5 tbsp. brown rice syrup
  • 1 tsp. cinnamon
  • 1 tsp. organic vanilla extract
  • Honey to Drizzle


  1. Pre-heat oven to 325 degrees.
  2. In a large bowl, mix together all of the dry ingredients (oats, quinoa, walnuts, pumpkin seeds, shredded coconut, dried banana and cinnamon).
  3. In a glass pyrex measuring cup, melt the coconut oil.
  4. Add the brown syrup and vanilla to the melted coconut.
  5. Pour over the top of the dry ingredients.
  6. Mix together.
  7. Line a cookie sheet with tin-foil and spray with organic non-stick cooking spray.
  8. Pour out granola onto cookie sheet.
  9. Bake for 45 minutes stirring every 10 minutes.
  10. When there’s about 5-8 minutes left to go, take the sheet out and sprinkle some more shredded coconut over the top of the granola and drizzle with honey.
  11. Finish baking for another 5-8 minutes.
  12. Let cool completely.

This granola tastes great served over yogurt, coconut/almond milk or even sprinkled on coconut milk ice cream for a sweet treat!
