Most people think of citrus as just peeling an orange and eating it… but there’s SO many ways to incorporate citrus into our meals. You can use it as a base for a poultry/seafood/meat marinade. You can chop it up in salads or even use in a vinaigrette for the salad. You can add it to baking for a clean, sweet n’ tangy flavoring. Or you can make jam with it. Sweet and delicious jam. That’s healthy, good for you and contains no added sugars!

Not only are most citrus fruits packed with tons of vitamin c but they contain antioxidants to inhibit the growth of cancer and protect against heart disease. Win win. Also, if you want to reap double the benefits of vitamin c, consume foods with iron in them along with the vitamin c. The iron helps the vitamin c nutrients breakdown and absorb into your system more easily.

You can use frozen cranberries for this just make sure to thaw them for a bit before adding them to your stock-pot.

Cranberry Orange Chia Jam

Cranberry orange chia jam is an easy, healthy and refreshing jam that’s perfect to warm up a winter breakfast or to impress your friends for brunch!

Ingredients

  • 1 1/4 cup whole organic cranberries
  • 1/2 cup juice of freshly squeezed oranges
  • 2 tbsp. chia seeds

Instructions

  1. Heat a stock-pot on medium heat on the stove.
  2. Add the cranberries and freshly squeezed orange juice.
  3. Let the cranberries/orange juice cook for about 5-8 minutes or until the cranberries start to pop.
  4. Transfer the mixture directly into a blender.
  5. Add chia seeds and blend mixture until it’s a thick consistency.
  6. Pour into a ball jar to store in the fridge.
