On Tuesday I chatted with you guys about radishes are how they’re a GREAT spring vegetable to start incorporating into your meals. Today I’ll be blurbin’ about an easy Cucumber and Radish Spiralized Salad. This is the first recipe a few “Simple Spring Recipes” I’ll be sharing with you guys over the next few weeks to encourage everyone to get up and out to their local markets to pick up some spring produce and start playing around with it in your kitchen. If you live in Northern climates where Spring is a little slower to return, you can find most of the ingredients at your local co-op or organic/natural section at your grocery store.

Simple Spring Recipes

Now if you don’t own a spiralizer don’t worry! You can still make a version of this recipe by using a mandolin slicer or buy simple slicing the cucumber and radish into VERY thing slices. I love the spiralizer because it dramatically reduces the prep time and makes it a fun salad to prepare! The key to spiralizing cucumbers and radishes is to make sure you have firm and JUST perfectly ripe veggies. If the veggies are “too” ripe and squishy they’ll easily fall apart when you try and spiralize or slice them.

This salad honestly takes 5 minutes to prepare and looks great serving at the dinner table. No more boring iceberg lettuce salads! The natural spicy “zing” from the radish and vinegar makes this an excellent addition to dinners cooked on the grill like hotdogs, hamburgers, grilled chicken or steak. I’m just partial to the combination of the smoky and spicy flavors.

Cucumber and Radish Spiralized Salad

This cucumber and radish spiralized salad uses some of Springs fresh produce and is refreshing and simple to make. Serve this to the family as a fun new salad to accompany a dinner made on the grill!

Ingredients

  • 2 small/medium cucumbers
  • 10 small radishes
  • 1/2 cup white vinegar
  • 2 tsp. sugar
  • 1 tsp. mustard seeds
  • 1 tsp. black peppercorn
  • Sea Salt
  • Black Pepper

Instructions

  1. Wash cucumbers and radishes.
  2. Using the mandolin blade on a spiralizer, spiralize the cucumbers and radishes and place them in a large bowl. (You may have to cut the spiralized veggies a bit so it’s not one long piece!)
  3. In a mixing cup, pour in the vinegar, sugar, mustard seeds and black pepperson.
  4. Whisk the ingredients together to mix.
  5. Pour over the cucumbers and radishes.
  6. Add a touch of freshly ground sea salt and black pepper to the top.
  7. Using tongs mix the cucumbers and radishes in the salad.
  8. Serve immediately!

If you prepare this in your Sunday food prep to have on hand throughout the week it WILL turn pink. DO NOT worry! It’s okay! It’s just the vinegar pulling the red & pink colors from the radish. Besides, I think it looks pretty in pink!
