Roasted chicken is my go-to dish when I want a clean dinner but something that soothes my soul and warms my chilly bones. I love the smell of a chicken roasting away in the oven. With the polar vortex hitting the nation again this week I knew we would all be in need of some good ole’ comfort.

Speaking of cold… I’m particularly enjoying this cold blast because I actually get to wear my thick sweaters without sweating my face off by the end of the day. Although my fellow southern friends would probably roll their eyes at me for saying that and grant me with a “bless your heart”. The sarcastic kind. I’m going to “enjoy” this cold weather and what winter really feels like while it lasts. I honestly love bundling up and feeling cozy while it’s frigid out there. And I can probably survive a little longer knowing my dear friends in the Upper Peninsula of Michigan are battling -40 wind chills!

The combination of cumin, ginger and curry in this dish adds a naturally warming flavor while the lemon yogurt sauce helps cut the spiciness down.

Organic spices have SO many health benefits that we often overlook. Learning more about spices has been one of my long-term cooking goals. I’d love to experiment with different spice combinations more and stock up on organic, dry spices!

Ginger: decreased motion sickness and nausea and adds in digestion. It can also reduce pain and swelling associated with arthritis and hinder blood clotting.
Cumin: is also good at aiding in digestion and improves immunity.
Curry: reduces inflammation

This is a super easy recipe using my How to Roast the Perfect Chicken Guide as your base. I just got creative with the seasoning of the chicken and added a yogurt sauce to serve over the top.

Ingredients

  • 1 Organic Roasting Chicken
  • EVOO
  • Cumin
  • Curry Spice
  • Ground Ginger
  • Black Pepper
  • Sea Salt
  • 1/2 cup plain Chobani Greek Yogurt
  • Juice of 1 lemon

Instructions

To Make Roasted Chicken

  1. Follow my steps on How to Roast the Perfect Chicken Here: http://brittsblurbs.com/back-to-basics-how-to-roast-the-perfect-chicken/
  2. Use the cumin, ginger, black pepper and sea salt to season the chicken.

To Make the Yogurt Sauce

  1. Combine the Greek yogurt, lemon juice, 1/2 tsp. curry seasoning and 1/4 tsp. of red pepper flakes into a small bowl.
  2. Mix together.
  3. Serve the roasted chicken by drizzling the yogurt sauce over the top.
