Raise your hand if you use to be obsessed with pizza rolls! That was totally me. Well okay, not obsessed but whenever we’d have them in the house I’d always heat them up for an after school snack. Lord knows how many of those processed food little bites I consumed. And during my first year of college… don’t get me started.

But alas, thanks to a recipe recommendation from one of my BFF’s I have created an easy AND HEALTHY pizza roll recipe. No need to worry about what to bring for that next get-together, tailgate (baseball opening day was yesterday!) or cook-out. These are the perfect “people pleasing” food. They’re bite size so no one needs to worry about using silverware or carrying a plate around… but you should for etiquette purposes!

The key to these is to get the outsides nice n’ crispy so they crunch as you bite them then the gooey tomato mixture oozes out as you get to the middle. If you’re serving them up for kids and they don’t like goat cheese, sub it out for their favorite type of fresh cheese!

Ingredients

  • 1 1/4 cup organic marinara sauce (or homemade!)
  • 2 gloves diced garlic
  • 1/4 cup diced onion
  • 1 cup shredded organic cheddar cheese
  • 1 cup shredded organic mozzerella
  • 1 tsp. red pepper flakes
  • 1 1/2 tsp. Italian seasoning
  • 2 tbsp. EVOO
  • Black Pepper
  • Sea Salt
  • 2436 wonton rolls

Instructions

  1. Pre-heat the oven to 350 degrees.
  2. Heat a pot on the stove over medium/high heat.
  3. Add 2 tbsp. of EVOO.
  4. Add in the onion and garlic and cook for 2-3 minutes.
  5. Add in the marinara, cheddar cheese, and mozzarella.
  6. Cook for 5 more minutes or until cheese is melted in.
  7. Mix in half of the Italian seasoning and red pepper flakes.
  8. Prepare your work area by setting out the marinara mixture, a bowl of water and the wonton sheets.
  9. Take one wonton sheet and spoon a little of the marinara sauce into the middle.
  10. Dip your fingers in the water and smooth along edges of wonton sheet.
  11. Fold wonton sheet over and press edges together to seal.
  12. Repeat this process for all of the wonton sheets.
  13. Lay out the pizza rolls on a lined baking sheet.
  14. Drizzle with a little EVOO and sprinkle with the remaining Italian seasoning and red pepper flakes.
  15. Bake for 30 minutes.

You can make these with the simple “triangle fold” or once you get it in a triangle, fold the corners in to make it look like a little pocket. If you prefer a traditional roll look, roll it up like a little burrito and fold the sides over.
