Who doesn’t love breakfast in bed?! Seriously, best idea ever. My favorite and the best meal of the day delivered right to you the minute you wake up, genius! Valentine’s Day happens to fall on a Saturday this year so what better way to surprise your sweetie than with a hot cup of coffee and these delicious Fluffy Croissants with a Sweet Beet Icing! And if you’ll be celebrating alone like me since B will be out of town… you can make these then immediately crawl back in bed and stay cozy all day!

Beets are actually one of my favorite veggies yet I rarely eat them because making them is often time consuming and messy. I love how they’re subtly sweet especially when roasted when all their natural juices come out.

I decided to use that natural sweetness to my advantage and make a sweet beet icing glaze using just roasted beets, organic powdered sugar and water. I love the way the beet icing melts into the croissant dying it a beautiful pinkish, deep red color! It helps the flavor of the icing seep all the way to the middle of this croissant so you get a taste of sweetness in the full bite!

Fluffy Croissants with Sweet Beet Icing

Ingredients

  • 1 Puff Pastry Sheet
  • 3 small organic beets
  • 1 cup powder sugar
  • 1 cup water
  • Honey

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Thaw pastry sheet.
  3. Cut beets into quarters and roast for 45 minutes.
  4. Turn oven down to 350 degrees.
  5. Cut pastry sheets into 12 triangle pieces.
  6. Roll pastry sheets up and place on greased and lined baking sheet.
  7. Drizzle with honey.
  8. Bake for 25 minutes.
  9. While croissants are baking, add roasted beets to a high-speed blender.
  10. Add in water and powdered sugar.
  11. Blend until a thick glaze is formed.
  12. Transfer the mixture to a gallon ziplock bag.
  13. After croissants are done baking, remove from oven and let sit 2 minutes.
  14. Cut a small hole in the corner of the gallon ziplock bag and drizzle the beet icing over the croissants.
