Come summertime, especially around the 4th of July, I have an obsession with anything s’mores. Normally I’m not much of a marshmallow fan but the combination of the sticky marshmallow, melty chocolate and crunchy graham crackers is just insane. I think it’s also one of those foods that automatically triggers good memories for just about anyone. It reminds me of summers spent around the campfire with my family at my cabin, with friends at bonfires or at summer camps. It’s an all-around comforting feeling that life is just plain good. Seriously.

Come 4th of July time I just get that “good” feeling. That warm n’ cozy feeling inside that life is wonderful and we are so blessed. I’m especially thankful this year to spend one of my favorite holidays celebrating this nation’s freedom with my favorite people in one of my favorite places.

Alright, enough of these lovey dovey feelings, I’m celebrating by making everyone some of these Frozen S’mores Sticks to enjoy while watching the 4th of July parade! These are so flavorful and SO easy. Often times it’s too warm during daytime grill-outs on the 4th to enjoy hot desserts (except pie, I accept pie donations any time at any temperature) so these are a sweet treat to cool your friends and family down.

Frozen S’mores Sticks

Ingredients

  • 12 marshmallows
  • 4 honey graham crackers
  • 3 tbsp. organic coconut oil
  • 3 tsp. cocoa powder
  • 12 toothpicks

Instructions

  1. Place marshmallows on a tray line with parchment paper and freeze for about 5-10 minutes or until marshmallows are hard on the outside.
  2. While marshmallows are freezing, in a glass pyrex mixing cup, melt the coconut oil.
  3. In a separate small bowl, crush the graham crackers and mix in the cocoa powder.
  4. Take the marshmallows out of the freeze and stick a toothpick in the middle of them.
  5. One at a time, dip the marshmallow in the coconut oil then roll it in the graham cracker/cocoa powder mix.
  6. Place back on the parchment paper lined tray.
  7. Freeze for another 10 minutes so the graham crackers harden to the coconut oil.
  8. Serve cold!
