Steaming artichokes with fresh lemon and ginger adds some natural flavor while boosting the nutrition benefits!
I mentioned briefly yesterday my love for artichoke. But seriously ya’ll, my love runs deep. Some people say they don’t like to work for their food; they don’t like crabs because eating them is too much work, ya-da-ya-da. Well I LOVE those types of food. I’m a big proponent of eating as an experience and eating to fuel your body. Not just eating to eat. And I believe when we eat and enjoy those foods we have to “work” at, it reminds us to slow down and enjoy life. Enjoy the bite and enjoy this food that you’re fortunate enough to have on the table in front of you!
Most of the time when I have cooked artichoke I’ve always steamed them with plain water. It’s never occurred to me to include things in the water to actually SEASON the artichoke as it cooks. Shame on me huh?! I mean look what I’ve been missing out on! Layering the lemon slices and freshly grated ginger in the bottom of the pot allows the natural flavors to soak into the artichoke leaves as they cook.
Ginger Lemon Steamed Artichoke
Prep Time: 10 minutes
Cook Time: 40-45 minutes
Ingredients (2 Artichokes)
- 1 lemon
- 1 tbsp. grated fresh ginger
- 2 local organic artichokes
- For Butter Sauce:
- 2 tbsp. organic butter
- 1 tbsp. EVOO
- 1 tsp. freshly squeezed lemon
(You will need two stock pots and two steamer baskets to make two artichokes at once)
Slice lemons and lay on the bottom of a stock pot.
Add 1/2 tbsp. of the freshly grated ginger to each stock pot.
Lay steamer basket on top of the lemon and ginger.
Fill stock pot with water until it comes up just beneath the steamer basket. (You do not want it coming through the basket.)
Slice the stem off the artichoke and use kitchen scissors to trim the tips of the leaves so they’re not so sharp.
Add the artichokes into the steamer baskets.
Turn on medium heat and let steam for 40-45 minutes or until artichoke leaves are tender.
While the artichokes are steaming, melt the butter in the microwave.
Mix in the EVOO and lemon juice.
You will have to warm this sauce then divide before serving.
And in order to get the full artichoke effect, you MUST serve it with some real butter sauce on the side. I used a half n’ half mixture of butter and EVOO to add in some other healthy fats. Use organic grass-fed butter to get the full health benefits.
