Can my mom just stay forever?! It seems like the older I get, the harder and harder it is to say goodbye. She’s my best friend so this past week has been phenomenal. My mind has been in a million different places between my new job and moving so she’s kept me sane this last crazy week before I move!

With the craziness lately my time working out has been slacking. I have a gym in my apartment complex I’ve been going to until I move and join a new gym but it just doesn’t cut it. It has barely any equipment so I’ve just been trying to do what I can. However, I’ve really been trying to focus hard on my nutrition. When I’m stressed and busy I often snack without thinking so nutrition is EXTRA important right now. Re-reading The Power of Food book has motivated me to get more creative again about incorporating more and more super-foods into each meal.

Ginger is one superfood I’ve grown to absolutely love. It’s so incredibly good for you and is amazing for those that suffer with digestive issues. It’s pretty spicy so I like to combine it in many dishes for a flavorful kick. I’ll put it in stir-fry’s, season chicken with it and add it to smoothies. This easy recipe is one I often resort to for an added kick in the morning. It helps “get the system moving” and fuels your body with REAL FOOD to power you through the morning. Plus who doesn’t love a smoothie bowl?! Thick n’ creamy with lots of toppings!


Ginger Mango Superfood Smoothie

  • 3/4 cup chopped mango
  • 1 tbsp. ground flax
  • Juice of 1/2 lemon
  • 1 tsp diced fresh ginger
  • 1 cup spinach
  • 3/4 cup coconut milk
  • 56 ice cubes
  • Shredded organic coconut flakes (for topping)
  • Ground flax (for topping)
  • Chopped walnuts (for topping)


  1. Add mango, 1 tbsp. ground flax, lemon juice, ginger, spinach, coconut milk and ice cubes to blender.
  2. Blend on high until completely blended.
  3. Pour into a large bowl.
  4. Sprinkle with organic coconut flakes, chopped walnuts and ground flax to taste.

I like to eat my smoothie bowl with a big spoon like cereal but if you have a large straw you can drink part of it as well. (Also, how sweet is my color changing straw?! It changes colors as it changes temperatures so it’s starting to turn to pink at the part that touches the smoothie!)
