Oh HEYYYY friends. Meet my new favorite breakfast, Gluten Free Pancake Cups. A busy-bee’s best friend. 

I’m obsessed with everything “cups”. I love making egg cups, veggie cups, hashbrown cups, swiss chard and bacon cups. Now I have a newbie to add to the food prep collection. These are made gluten free and you can really add whatever “toppings” you want to them. Obviously my favorite is the dark chocolate chip because what’s better than biting into a chocolate chip pancake muffin for breakfast? 

Uh yes. Plus let’s talk about the portability. These are so great to take to work and heat up in the toaster oven first thing in the morning with my cup of coffee. Add my protein shake and it makes a great post-workout treat!

Gluten Free Pancake Cups

These gluten free pancake cups are a great grab-n-go breakfast option to fuel you all morning long!

Ingredients

  • 1 3/4 cups {Gluten Free} Flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 3 flax eggs
  • 1 tsp. vanilla extract
  • 1 cup vanilla almond milk

For various toppings use

  • Berries
  • Nuts
  • Chocolate Chunks

Instructions

  1. Pre-heat the oven to 350 degrees.
  2. In a large mixing bowl, mix together flour, baking powder and salt.
  3. In a medium bowl beat the eggs, add the vanilla extract and cup of vanilla almond milk.
  4. Pour the liquid ingredients into the dry ingredients.
  5. Mix together.
  6. Line a muffin tray with muffin liners and spray with cooking oil.
  7. Pour the batter into the muffin liners.
  8. Add toppings onto the top of the batter and use your finger to press into the cup. Toppings could include blueberries, chocolate chips or walnuts.
  9. Top each muffin with a sprinkle of brown sugar.

Serve these with a side of maple syrup. Yes, a side. These are perfectly “dunkable”. Uh lord I am on a roll making up words in this post. But for realz. Try the chocolate chip and dunk em’ in the maple syrup and then go along your merry little way so content and happy. You’re welcome.
