These are SO easy peasy to make and change things up from typical mashed sweet potatoes or regular potatoes. Pardon the super orange patties, the sun was a shinin’ yesterday!

I am pretty pumped that instead of paying an arm and a leg for fresh herbs from the grocery store, I can now walk right out to my little patio and clip some to add flavor to my dishes! Except keeping those little plants watered in the hot south will be a whole different ball game. I think I need to find one of those glass water dispenser that you stick in the soil of the pot and they slowly drip water to the roots. The rosemary + sweet potato pairing seems to go so well together. The strong savory flavor is evened out by the creamy, sweetness of the sweet potato.

This is almost like a pancake/sweet potato burger so brunch is the PERFECT meal to enjoy this at.

You can get creative and drizzle pure maple syrup over the top for a little extra sweetness or even a dollop of softened organic butter mixed with some extra chopped rosemary. YUM!

Sweet Potato Patties

Ingredients

  • 3 medium sweet potatoes
  • 2 tbsp. chopped fresh rosemary
  • 1 1/2 tbsp. Earth Balance Butter

Instructions

  1. Roast the sweet potatoes on 425 degrees in the oven for about an hour or until the potatoes are completely soft.
  2. Remove from oven and let cool.
  3. Remove the skin from the sweet potatoes.
  4. Fork the sweet potato into a bowl and mash up.
  5. Mix in the rosemary, season with sea salt and black pepper.
  6. Heat a large skillet on the stove on medium-high heat.
  7. Add the Earth Balance butter.
  8. Once the butter heats up, spoon the mashed sweet potato out of the bowl in about 1/4 cup sizes.
  9. Form the mashed sweet potato into a patty with your hands.
  10. Add to the skillet.
  11. Cook on each side 5-8 minutes until the side is crispy brown.
