Whoah baby. This is like all the deliciousness of fall wrapped up inside a fresh, farm-picked apple. BUT without all the added calories of traditional cobbler.

Ya’ll know I love making my recipes clean, easy and delicious. 

I feel as though I’ve been neglecting apples for awhile. Typically I just grab em’ and bite into them. Never really experimenting with them in my meals or recipes. However, that’s about to change.

This is actually the first time I’ve baked apples! Gasp, I know. What a better way to get your apple a day!–Hey, I listen to my doc!

Inside Out Baked Apple Cobbler

Inside Out Baked Apple Cobbler is a fun, single-serving fall dessert that’s made “semi-healthy”.

Ingredients

  • 4 medium apples
  • 1 cup oats
  • 1/4 cup maple syrup
  • 3 tbsp. coconut oil
  • 1/2 cup chopped walnuts
  • 1/2 tsp. cinnamon
  • 1/4 tsp. all spice

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Core the apples and slice the top off so it it’s flat.
  3. Add oats, walnuts, cinnamon and all spice to a medium bowl.
  4. Mix together.
  5. Melt the coconut oil in a small bowl and add the maple syrup.
  6. Pour the wet mixture over the dry.
  7. Mix together.
  8. Spoon into the apples stuffing them well and adding extra to the top.
  9. Place in a square baking dish to hold the apples upright.
  10. Bake for 40 minutes.

I’m almost 100% positive this would taste pretty darn delicious with some vanilla ice cream served on the side as well. Yep. Completely positive.
