This is the perfect entertainment for me. Give me some of my favorite things on one special day and I’m a happy girl! The problem here though is the fact I like ALL THREE things.

I don’t just watch the Super Bowl for the football (although don’t talk to me during plays, you’ll probably find me zoned in!), I also watch it for those darn commercials (gets the marketing geek in me every time!), and OF COURSE I watch it to enjoy some scrumptious appetizers on the side.

I mean, that’s just what you do. Scream at the play. Stuff face with food. Laugh at the commercials. Repeat.

It’s the simple things.

Kind of like these babies; simple, satisfying, and I can’t forget to mention, a pretty healthy appetizer too! All cooked and ready to be devoured in under 20 minutes. Count me in!


Italian Stuffed Mini Bellas

These Italian Stuffed Mini Bellas are a tasty, savory appetizer to please any crowd.

  • EVO
  • 3 tbsp. chopped onion
  • 1 minced garlic clove
  • Baby Portabella Mushrooms, about 7-8 small/medium sized
  • 3 slices turkey bacon, chopped small
  • 2 Swiss chard leaves chopped, about 2 cups
  • 1/3 cup chopped roasted red peppers
  • 1/4 cup shredded mozzarella
  • Parmesan
  • Black Pepper
  • Italian Seasoning


  1. Pre-heat oven to 400 degrees.
  2. Drizzle olive oil in skillet.
  3. Toss in onion and sprinkle with black pepper & Italian seasoning.
  4. Once onions have begun to brown, add in turkey bacon.
  5. Cook turkey bacon through.
  6. Add in garlic & Swiss chard.
  7. Saute mixture then add in the red peppers.
  8. Right before the mixture is done, stir in the mozzarella to melt.
  9. Stuff mixture into baby portabellas.
  10. Sprinkle with Parmesan cheese.
  11. Bake for 20 minutes.
