Hi Friends! Another Sunday means another food prep day. Here’s what I’ve prepped and planned for the week ahead.

I prepped:

  • Cashew pad thai sauce–> for dinner
  • Coconut curry chicken soup–> for lunches
  • Cashew/walnut/date brownie bites–> for snacks
  • Breakfast burritos–> for breakfast
  • Soaked almonds–> for snacks

Sunday: Zucchini Noodle Pad Thai
Monday: Eggplant Bake
Tuesday: Fish Parchment Bake
Wednesday: Sweet Potato Noodle with Mushrooms, Spinach, Parmesan
Thursday: Breakfast for dinner
Friday: Pizza/Out
