Meal Plan: Week of October 9

Healthy meal plan and food prep for the week of October 9th, 2016.

Is it really already going to be Monday tomorrow?! WAH. The weekends go by so FAST. Here’s a look at what I prepped and planned for this week. Bring on the fall dishes, baby!

I prepped:

  • Pho Soup–> for lunches
  • Butternut Squash Sauce
  • Butternut Squash Bake–> for dinner &  lunches
  • Roasted Spaghetti Squash–> for dinner
  • Chopped Sweet potatoes–> for dinner
  • Energy Balls–> for snacks


This Week’s Healthy Dinner Menu:
Sunday: Butternut Squash Mac n’ Cheese Bake
Monday: Spaghetti Squash with Butter Sage Sauce
Tuesday: Sweet Potato Curry Cabbage Rolls
Wednesday: Pad Thai
Thursday: Stuffed Sweet Potato
Friday: Out
