Meal Plan: Week of August 4

Time to kick off another healthy week. I’ll be travelling a bit this week so I’m prepping some food to take with me for snacks/etc. so I don’t get too off track!

I prepped:

  • Steam Broccoli– lunches
  • Roasted Sweet Potatoes– lunches
  • Chicken Burgers– lunches & dinner
  • Hard Boiled Eggs– snacks
  • Chopped Mango– snacks
  • Farro– dinner
  • Frozen Banana Slices– snacks
  • Cooked Beets– lunches & dinner
  • Banana Bread Dough Bites– snacks


This Week’s Dinner Menu:
Sunday: Scallops w/ okra & corn
Monday: Beet, farro, goat cheese salad on arugula and beet greens
Tuesday: Chicken burger w/ tomato sauce, broccoli and sweet potato
Wednesday: Travelling
Thursday: Travelling
Friday: Wing-It

    I just have to tell you that after I saw your plans to put mango in your stir-fry last week, I bought mango and put it on my vegan tempeh and veggie kabobs last night. It was SO good!
