Meal Plan: Week of December 28

Hi there friends!!

I’m back from a WONDERFUL Christmas vacation with my family up in the mountains of North Georgia!

I’m so sad it’s over but SO happy I was able to unplug and soak up time spent with my family. I’ll share some pictures of the trip tomorrow in my Marvelous In My Monday post. I’m back in the office just a few days this week then taking another mini vacation Wednesday afternoon through Sunday!

Since the rest of my family had a ways to drive I was loaded up with all of the leftover groceries! Which is the perfect amount to get me through the next couple days. I did do a little bit of food prep to have some clean snacks/meals on hand!

I’ve certainly enjoyed far too many treats and rich food over vacation but I’m not one to dwell on that. I believe in balance so if I want to enjoy foods I normally don’t have I have no problem with that. I just make sure to pick right back up eating clean and exercising. Since I was sick before vacation and only fit in a few workouts while on vacation I’m looking forward to hitting the gym this week! I also got a fitbit for Christmas so I’m excited to put that to the full test this week logging my water intake and fitting in my step goals!

I prepped:

  • Thawing Seafood Chowder– to have for lunches
  • Made a tossed salad– to have for lunches
  • Energy Balls– for snacks
  • Homemade Granola Bars– for snacks

This Week’s Dinner Menu:
Sunday: Baked Flouder Fillet
Monday: Steak Salad with Baked Potato
Tuesday: Breakfast for Dinner– Hashbrown Egg Cups
Wednesday: Out to Dinner for New Years Eve
Thursday: Gone
Friday: Gone
