I guess with the slow arrival of spring (fingers crossed) comes an icky mix of rain and snow. The weather today is dreadful to say the least and losing an hour of sleep with daylight savings time does not help.
However, it has been the perfect weekend to get a lot of stuff done, i.e. reorganizing, repacking things, cleaning and food prep for the week ahead.
Later I’ll be making up some hard boiled eggs, granola bars, granola, quinoa and lentils to have ready for the week.
This Week’s Dinner Menu:
Sunday: Steak topped with mushrooms, side of mashed cauliflowers and steamed peas
Monday: Mediterranean Quinoa pilaf with olives, feta & artichokes. Steamed Brussels sprouts side.
Tuesday: Grilled turkey over lentils w/ roasted butternut squash & side spinach salad
Wednesday: Baked salmon with swiss chard & roasted sweet potato
Thursday: Stir-Fry with Beef, BokChoy, Peppers, Sugar Snap Peas over Asian Noodles
Friday: White Bean Chicken Chili or Wing-It
