I prepped:

  • Roasted Chicken- chicken for lunch meals throughout the week
  • Brown rice & steam broccoli- for lunches
  • Hard boiled eggs- for snacks
  • Halved grapefruit- for snacks
  • Sliced pears- for snacks
  • Soaked Almonds- for snacks
  • Roasted Sweet Potatoes (not pictured)- for lunches

This Week’s Dinner Menu:
Sunday: Parmesan Tomato Kale Salad
Monday: Soba Noodles with Sauteed Mushrooms & Asparagus
Tuesday: Leftover Shepherd’s Pie
Wednesday: Cod, Sweet Potato & Asparagus
Thursday: Turkey Tacos w/ Spinach, Avocado, Onion & Tomatoes
Friday: Wing It

    For someone who’s gluten intolerant your meal plans are just fantastic! I just wish I could get the almond milk here in Vietnam 🙂 Actually my family started cooking from the Paleo recipe (http://timreviews.com/paleo-recipe) book my best friend recommended to me and I realize how important it is to eat healthy.
