Hi Friends! Happy Sunday!

I’m back from my short blogging hiatus I took to really enjoy the most of my Thanksgiving long holiday weekend. I hope you enjoyed yours as well! I’ll have some snapshots of my weekend in tomorrow’s MIMM.

Since it’s back to a full work week and back to regular clean eating it’s a big food prep day for me!

  • Quinoa Salad– for lunches
  • Walnut & Cranberry Bites– for snacks
  • Pumpkin Cream Cheese Wontons– for snacks
  • Mango– for snacks
  • Steamed Broccoli– for lunches
  • Roasted Chicken & Sweet Potatoes– for lunches & Sunday dinner

Sunday: Roasted Chicken Thighs with Sweet Potatoes & Broccoli
Monday: Stuffed Portabella Mushroom with Mashed Cauliflower
Tuesday: Stuffed Pepper with Ground Beef & Kale
Wednesday: Creamy Kale Salad with Nutritional Yeast Dressing, Chickpeas & Parmesan
Thursday: Leftovers
Friday: Out to Eat
