What a great weekend! Hope everyone had a good one as well!

It was a rainy and overcast weekend here in Georgia but it was perfect for a lazy morning breakfast out, DIY projects and a date night in!

B and I enjoy picking a night every so often where we can cook a date night dinner in. We typically go “all out” and aim for dishes we would never traditionally make. Perhaps my favorite part is just stocking up with all the goodies at Whole Foods the morning of.

We kicked off “happy hour” with a glass of vino, pesto and caviar crostini bites and olives and grape leaves (for me!)

Next up were these DELICIOUS caprese pesto potato skins! We used the recipe from Iowa Girl EatsThese took awhile to put together but we both agreed they were well worth it! Definitely making these for the next get-together we have with our friends!

Grilled Whole Fish | Britt's Blurbs

For the main course we decided to give grilling a whole fish a try. It was actually a lot less complicated than we thought it was going to be.

Whole Foods cleans the fish for you but you still need to remember to watch for bones and take the spine out once it’s done cooking.

We grilled up a Wild Sea Trout. We rubbed it with EVOO and stuffed it with fresh lemon slices, garlic, onion and thyme.

Make sure to clean and oil your grill well and get it really hot before placing the fish on it.

Cook the fish for about 10 minutes per side. Since it’s cut open you can lift the sides to see how done the meat is.

We served ours over a brown rice mix with some grilled asparagus on the side!

Peach Flambe | Britt's Blurbs

And finally, for dessert, B made us Peach Flambe! This was extremely entertaining to watch him put it together. Caution: do not add too much rum. A huge flame will result and the possibility of nearly burned eyebrows may occur. Speaking from experience.

Everything was delicious! Some nights I just prefer eating in and cooking ourselves instead of dealing with the hustle and bustle of restaurants and paying the extra money for dishes we can try to replicate! Plus the memories are ten times better.
