Hope you all had a great one! Mine was spent getting ready for my vacation and also getting a little r&r!
Lots of packing was done, spending time soaking up the sunshine, a hot n’ humid saturday sweat run and lots of good blog post prep! Have no fear, I have plenty of good content planned while I’m gone plus some guest posts from a few of my favorite bloggers!
This week’s #dinnerunder30, Easy Weeknight Meal Idea is another taco idea!
If you’ve read ‘the blurbs’ for awhile you know how much I love a good taco. Just like most of us. Summer is the perfect time to experiment with taco variations.
Spicy Lentil Tacos
In celebration of #MeatlessMonday I decided to whip up some easy Spicy Lentil Tacos.
To make the lentil filling:
- Heat a large skillet on medium-high
- Add in 1 tbsp. olive oil
- Add in 1/4 cup chopped onion and 1 minced garlic
- Cook for 1-2 minutes
- Next add in 1 can Red Gold Petite Diced Tomatoes with Green Chilies, 1 cup dry lentils, 1 1/4 cup water and 1/2 minced jalapeno
- Bring to a bowl then turn down and simmer for 20-25 minutes
That makes about 2 1/2 cups cooked lentil mix.

Fill your tacos with lettuce, then the lentil mixture, topped with fresh chopped tomatoes & avocado and some plain greek yogurt to “cool things down”!
**For an extra quick dinner make your lentil mix ahead of time in your Sunday food prep so all you have to do is heat it up and plate your tacos!
