What makes my Monday MARVELOUS?!
I spent most of my weekend in productive mode. No rest for the wicked right?! Lots checked off but somehow that list keeps growing. I seem to be more productive though when I keep myself busy!
Even though I spent a good portion of my Saturday getting my jeep worked on I did whip out some of these… Blood Orange Coconut Biscotti. Nom.
And spent a relaxing Sunday morning watching the blistery wind and enjoy some of Peanut Butter Fingers Whole Wheat Honey Pumpkin Pancakes. Pancakes just DEFINE the weekend. Plus it was my rest day from the gym so I was able to spend a bit more time helping prep breakfast.
And sticking with the coconut theme lately?! (I don’t know what my deal is).. I made that Baked Coconut Shrimp I was talking about for dinner last night. Whoah baby these were delicious! Served over a quinoa/brown rice mix with a small steak on the side and steamed snow peas!
Now besides all that good food this weekend. I did get some exercise in to burn it off… biking done Saturday morning followed by a late morning core strength yoga class. The people who say yoga is “easy”.. I challenge you to take a class like that! Yoga is beginning to strengthen and stretch muscles I never even knew I had!
