Okay, first let me say that Spring better be here NOW since it is the first day of Spring! This whole chilly weather lately and cloudy skies is no fun. (And stinks for my photography when I get around to making a dish on the weekends so I apologize in advance.) This recipe was just too delicious not to share.

Anywho– Spring means bright colors and delicious, fresh flavors! Everything is coming alive again. Especially our taste buds after a cold and dark winter. Hang in there all my Northern folks! There is warmth on the horizon!

Orange is a fruit I typically like in “phases”. Do you ever go through those cycles where you’re totally loving something then can’t taste anything like it? That’s me. All. The. Time. My taste buds constantly fluctuate but mostly go with what’s in season. I think it’s partially my brain telling my taste-buds “it’s strange to get berries in the heart of winter unless they’re shipped from FAR away.” Etc. Etc.

But I absolutely love the pairing of orange & cilantro. It’s just so darn refreshing. Just as good as orange & rosemary in my  Orange Rosemary Crockpot Chicken recipe.
These patties are filling yet refreshing and are bound to please a big crowd of eaters!

Orange Cilantro Quinoa Patties

Orange cilantro quinoa patties are a refreshing spin on a quinoa patty with the sweet citrus and savory cilantro taste. These are perfectly cooked when they’re crispy on the outside and chewy through the middle!

Ingredients

  • 2 cups cooked quinoa
  • 2 tbsp. chopped cilantro
  • 2 eggs
  • 3 tbsp. ground flax
  • Juice of 1 large orange
  • Zest of 1 large orange
  • 2 tbsp. flour
  • Black Pepper
  • Sea Salt
  • Italian Seasoning
  • 1 tbsp. Earth Balance Butter

Instructions

  1. Add the quinoa, cilantro and orange zest together in a large bowl.
  2. In a separate bowl, whisk the eggs and orange juice together.
  3. Mix in the ground flax.
  4. Pour the wet mixture into the dry and mix together.
  5. Add the flour and mix together.
  6. Season with a pinch of black pepper, sea salt and Italian seasoning.
  7. Heat a large skillet over medium-hot heat.
  8. Add 1 tbsp. Earth Balance Butter.
  9. Scoop the quinoa mixture out in 1/4 cup measurements and form into patties.
  10. Add 2-3 patties at a time on the skillet.
  11. Cook until sides are completely browned.
  12. (You may need to add more butter to the pan to cook another round of patties.)
