Happy first day of October!

Now we’re really breaking into all things fall. Speaking of October, that means I need to get cracking on figuring out a Halloween costume this year! Trick or treating at any age should be socially acceptable.

Back to these breakfast bars… these babies are one nutritious and delicious chunk of fall.

They’re packed full of ingredients to fuel you through your morning. Because sometimes, let’s admit it, we all could use as much help as we can get in the morning!

Pumpkin Honey Nut Breakfast Bars

Pumpkin honey nut breakfast bars are a tasty way to start out the perfect fall day.

Ingredients

  • 1 cup white whole wheat flour
  • 1 cup garbanzo bean flour
  • 2 cup oats
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • 1/3 cup organic applesauce
  • 1 egg
  • 2 tbsp. melted earth balance butter
  • 1 cup organic pumpkin
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped almonds

Instructions

  1. Pre-heat oven to 350 degrees
  2. In a large bowl, add the dry ingredients. Whisk together.
  3. In a separate bowl, whisk the egg, then add the melted earth balance, apple sauce, pumpkin, vanilla extract, and honey.
  4. Stir to combine.
  5. Mix the wet ingredients into the dry ingredients. (The mixture will be thick!)
  6. Fold in the nuts and mix well.
  7. Spray a baking pan with organic non-stick cooking spray.
  8. Spread the mixture evenly in the pan.
  9. Drizzle honey generously over the top before putting into the oven.
  10. Bake for 38-40 minutes.

I love the chilly, fresh air in the morning! Nothing a fleece, cup of coffee and one of these bars can’t handle!

    If you don’t have garbanzo bean flour can you substitute for regular flour and use two cups instead of one of each?
