Pumpkin Honey Nut Breakfast Bars

Pumpkin honey nut breakfast bars are a tasty way to start out the perfect fall day.




  1. Pre-heat oven to 350 degrees
  2. In a large bowl, add the dry ingredients. Whisk together.
  3. In a separate bowl, whisk the egg, then add the melted earth balance, apple sauce, pumpkin, vanilla extract, and honey.
  4. Stir to combine.
  5. Mix the wet ingredients into the dry ingredients. (The mixture will be thick!)
  6. Fold in the nuts and mix well.
  7. Spray a baking pan with organic non-stick cooking spray.
  8. Spread the mixture evenly in the pan.
  9. Drizzle honey generously over the top before putting into the oven.
  10. Bake for 38-40 minutes.
