Subbing out those ingredients for quinoa and Greek yogurt I was able to create a delicious summertime salad with WAY less bad fat and added in good for you, energy-boosting calories. I like my salads thaaaicckkk so this baby is bulky. Plus it’s naturally slightly sweetened with dried cranberries and cinnamon.!

Ingredients

  • 2 cups cooked quinoa
  • 3/4 cup chopped celery
  • 3/4 cup dried organic cranberries
  • 1/4 cup pumpkin seeds
  • 1/2 cup chopped walnuts
  • 1 1/4 cup Greek yogurt
  • 1 1/2 tsp. cinnamon

Instructions

  1. Add all ingredients into a large bowl.
  2. Fold in and stir together.
  3. Store in an air-tight container in the refrigerator.
