My food mood changes almost simultaneously with the weather. The minute the temps drop I crave hearty, warm dishes.

But mark my words, I’m not just a brothy soup girl. I need more substance than that. If I’m going to have a brothy soup, I need dunkable food to go along side. Or else I’ll settle for a hearty chili please.

Yes, dunkable food should be a food category.

This fritters are THICK N’ HEARTY. The perfect side to cut up and dunk into tomato soup. Or drizzle soup over them. Or drizzle any sauce that you fancy over them for that matter.

Quinoa cornmeal fritters are a delicious side dish for the fall or any holiday dinner.

Ingredients

  • 1 cup cornmeal
  • 3/4 cup water
  • 1 cup cooked quinoa
  • 1/2 cup chopped green onions
  • 1/4 cup white whole wheat flour
  • sea salt

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Pour cornmeal and water in a small bowl together and let sit for 5 minutes so the cornmeal soaks up the water.
  3. In a large bowl, combine the cornmeal, quinoa, chopped green onions and flour.Mix together.
  4. Season with black pepper & sea salt to taste.
  5. Scoop the mixture and form into about 1 to 1 1/2 inch in diameter fritters.
  6. Place on a lined baking sheet.
  7. Bake for 20-25 minutes or until top is golden.
