I made you the most creamy, delicious oatmeal that you can just take right back to bed with you. What? It is the weekend after all. Weekends are meant for breakfast in bed.
Have you ever added sliced bananas into your oatmeal as you’re making it? Like stovetop? Because if you haven’t, I’m about to change your life.
Adding bananas makes the oatmeal so creamy and naturally sweet so when you combine that with quinoa, it’s out of this world! Plus you get the natural protein and “staying power” of quinoa to help power you through the morning.

This quinoa oatmeal is creamy, hearty, and fuels you up to power you through your morning.

Ingredients
- 1 cup dry organic quinoa
- 2 1/2 cups organic vanilla almond milk
- 1 banana
- 1/2 cup fresh organic raspberries
- 1/2 cup fresh organic blueberries
Instructions
- In a medium stockpot, add quinoa and almond milk.
- Turn heat to medium high.
- Slice banana and add into stock pot.
- Bring to a boil and then turn down to a medium simmer.
- While quinoa oatmeal is cooking, in a small stock pot on medium high heat, add the berries and 2 tbsp. of water.
- Using a potato masher, lightly mash the berries.
- Let them cook down for 5 minutes then set aside.
- Continue to stir the quinoa mixture until quinoa is cooked and mixture is thick and creamy like oatmeal.
- Add to a serving bowl, top with a splash of vanilla almond milk and top with berry compote.
