Quinoa Oatmeal with Berry Compote

This quinoa oatmeal is creamy, hearty, and fuels you up to power you through your morning.



  1. In a medium stockpot, add quinoa and almond milk.
  2. Turn heat to medium high.
  3. Slice banana and add into stock pot.
  4. Bring to a boil and then turn down to a medium simmer.
  5. While quinoa oatmeal is cooking, in a small stock pot on medium high heat, add the berries and 2 tbsp. of water.
  6. Using a potato masher, lightly mash the berries.
  7. Let them cook down for 5 minutes then set aside.
  8. Continue to stir the quinoa mixture until quinoa is cooked and mixture is thick and creamy like oatmeal.
  9. Add to a serving bowl, top with a splash of vanilla almond milk and top with berry compote.
