Okay so I know I’ve been all about that Pad Thai lately but this recipe and my Zucchini Noodle Pad Thai have some competing to do. I might dare say that this Superfood Pad Thai beats out the Zucchini Noodle! GASP. I know.

But seriously, this is one of the best dinners I’ve made in awhile. All of the flavors combine so well together. You have the creaminess of the noodles and my Spicy Cashew Pad Thai Sauce plus the crunchiness of the fresh veggies.

I’m not one to repeat a dinner every week but this has been on my meal prep just about every week now.

Ingredients

  • 1 box of brown rice pad thai noodles
  • 1/2 cup chopped cucumbers
  • 1/2 cup chopped orange peppers
  • 1/2 cup mung bean sprouts
  • 1 cup cashew pad thai sauce
  • 2 tbsp. chopped cilantro
  • Sriracha

Instructions

  1. Cook the pad thai noodles according to the package directions
  2. Drain the water off
  3. Toss with the cashew pad thai sauce
  4. Serve on individual plates
  5. Top with mung bean sprouts, cucumber, peppers, sprinkle with cilantro and top with Sriacha

I love that this combines the warm noodles with the cool vegetables. However, you can make a big batch of this in your Sunday food prep then lightly warm this up in a wok when you’re ready to enjoy it during the week.
