Tuna cucumber rolls are a delicious summertime snack or simple lunch. Kids will love making these too!
These tuna cucumber rolls are so easy and refreshing!
To make I simply made cucumber ribbons with a vegetable peeler. You can only really do the sides of the cucumber because as you start shaving the middle seed area it becomes too soft to roll up.
In a bowl I combined:
- 2 cans of tuna
- 2 heaping tbsp. of organic goat cheese
- 2 chopped organic roma tomatoes
- 1/2 tsp. freshly chopped lemon thyme
- 1 tsp. chopped fresh parsley
Season with black pepper and sea salt and mix until combined. I used about 3 cucumber ribbons per roll. Lay the ribbons slightly spread out on top of each other. Spoon a heap of the mixture into the middle and roll up. Continue until all ribbons and tuna mixture is gone.
Serve this up as a light summer dinner, a side dish or an appetizer! It’s fun to make so get the whole family involved and have your kiddos help if you have some!
