{WIAW} Bringing Back the Good

Happy #WIAW all!

I’ve been hearing some great feedback on yesterday’s “What Yoga Is Teaching Me About Communication” post! I’d love to hear yours as well! What’s one thing yoga has taught you if you practice or what is one communication skill you’ve learned to cherish?

Yesterday I attended a business luncheon.. such a great experience! It’s an event called, “Connecting Women In Business” that my area Chamber of Commerce puts on everything month. Each month they have different speakers on an array of businesses topics while lunch is served. I always love networking and building those connections!

I didn’t want to freak everyone out with my blogging picture taking during lunch.. so here are my eats from Monday! Thank as always to Jenn for this wonderful blogger link-up!

{Breakfast}

Breakfast | Britt's Blurbs

A filling bowl of pumpkin oatmeal with egg whites cooked in. I love how it adds the extra “fluffiness”. I also always add ground flax and coconut oil to my oatmeal to give it some healthy fats. Topped with almond butter of course!

{Lunch}

A cup of my dad’s famous white bean chicken chili topped with mozzarella  I’ve tried to get him to share the recipe with you guys but it’s just too “top secret”! And a small side salad with roasted butternut squash prepped from Sunday, tomatoes, avocado, pumpkin seeds and some tortilla chips to crumble over the chili!

{Snack}

I told you guys this Blood Orange Coconut Biscotti is to die for. I couldn’t resist the perfect afternoon treat topped with some almond butter and dunked into green tea! A fresh blood orange to finish it out on the side. Fuel for a busy day of office work!

{Dinner}

Dinner | Britt's Blurbs

For dinner I made up some fresh spring rolls, homemade “light” peanut sauce, and an edamame/red pepper/celery side salad. YUM! I forgot how much I loved making spring rolls; time to bring back the good! I adapted the recipe from Eating Bird Food. Into the rolls went crispy tofu, avocado, cucumber, carrots and spinach.

{Dessert}

This is what happens when I have leftover melted chocolate from the biscotti. I would hate to have it go to waste.. 😉

    what a great day of eats! totally love the soup/salad pairing and also the orange coconut biscotti snack. i love uniquely flavored baked goods!
    my town commerce chamber has an event like this each month but i’ve never gone. i always just assume i’ll be the youngest one there. heck maybe i should give it a shot, i may find a britt!

    Wow, your meals look DELICIOUS! Especially that salad and those spring rolls. You need to come over and teach me how to make those!!
