{WIAW} Sanity Fuel Food

One week from today and it’s this girl’s birthday … and the arrival to my new city!

The countdown (and nerves) are on! I feel like everything lately has been a blur. So much to do and so little time!

However, I’ve been loving the Phase 5 Best Body Bootcamp workouts and have been focusing on fueling my body with plenty of #fuelfood to keep my sanity!

Here’s a look at my eats from yesterday…

{Breakfast}

Similar to last week, huh?! I know, I know. It’s so darn good though. Fueled up with my banana vanilla protein shake after my workout and an egg, spinach, laughing cow cheese and English muffin sandwich. Fresh coffee on the side!

{Mid-Morning Snack}

After more packing and checking little things off my relocating “check-list”, I refueled with some nuts and fresh blueberries!

{Lunch}

I don’t know why I haven’t had a collard green wrap in awhile. I use to eat these ALL the time last summer for my packed lunches at work. Into this one went a few pieces of coconut tempeh from Monday night, hummus, spinach, tomato and avocado. Some sweet peppers, goat cheese and rice crackers on the side! Such a delicious and nutritious lunch!

{Mid-Afternoon Snack}

Another afternoon spent filled with errands and getting stuff DONE. I had “cereal” on the brain so I made a concoction of sorts. Into the bowl went 1/2 chopped pear, a crumbled homemade peanut butter granola bar and a scoop of peanut butter- almond milk poured over the top. Hit the spot!

{Dinner}

My parents and I went out to eat at a local restaurant, The Noggin Room. They had a pumpkin/fig soup on special so I ordered a cup of that and a side of a garden green salad. The soup was thick and creamy which was perfect for the rainy evening.

I’ll be picking up some of my main pantry items today so I don’t have as much to get once I arrive in Gainesville.
