{WIAW} Snow Day!

The snowjam/snowmageddon of the south has hit! The south is definitely not equipped to handle snow since they don’t get it but once every few years. Traffic was CRAZY and so were the roads. I enjoyed seeing the familiar white stuff and am so thankful I spent the day in my warm and cozy apartment. Many people were stranded in traffic jams and the Atlanta gridlock. Watching the news this morning people are STILL stranded and the interstates are completely frozen over. That’s 16+ hours of this madness. Praying that everyone, including children still stuck on buses, can make it home safely!

Here’s a look at my eats from a half work day, half snow day yesterday…Peas and Crayons

{Breakfast}

Since I took the morning off from working out to let my back rest for another day, I had the time to make hot protein oats. Into the mix went rolled oats, egg whites, almond milk, 1/2 chopped banana and topped with chopped walnuts and drizzled peanut butter!

{Mid-Morning Snack}

Hard boiled egg & 1/2 grapefruit.

{Lunch}

We were closing the office early so everyone could get home safely so I quickly ate my lunch then finalized emails before hitting the road. Lunch was my usual brown rice, chicken, asparagus and avocado mix with a side of an apple and sweet potato slices!

{Mid-Afternoon Snack}

I was able to take a much needed afternoon of laying down to ice my back while working on some things for work and reorganized my apartment desk. I enjoyed a cup of ginger tea and homemade granola bar mid afternoon.

{Dinner}

And for dinner, the perfect cozy snowy evening meal! Pasta with organic beef, sauteed kale and onions with drizzle EVOO and shaved organic white cheddar. Oh my goodness it was so delicious! I of course had to cozy up on the couch with my snuggie after this. Hey, I’m making the most of the rare chilly southern weather!

    Ahhhh the south is so crazy with this snow. Atlanta is a mess- I finally parked my car and walked home in the mess!

    Wow I can’t IMAGINE being suck that long in traffic! We got quite a bit of snow here in Richmond but I’ve been staying home so I can’t complain :)8

      I know! Some of these stories are crazy! I was definitely thankful for a cozy warm apartment!

    OMG this atlanta thing is in-freaking-sane. I hate hate hate driving in snow and get so panick-y and anxious so that sounds like the worst thing ever. i’d have a breakdown. your eats look awesome!
